It starts with a question Micaela kept coming back to: what happens when you take one of the world’s most beloved pastry traditions and collapse it into a single, hand-held cookie?
The Inspiration: Kanafeh
If you’ve never had kanafeh (also spelled knafeh), you’re missing one of the great pleasures of Middle Eastern dessert culture. It’s a layered pastry made with shredded phyllo dough called kataifi, soaked in sweet syrup and filled with cheese or cream. Pistachios are almost always involved.
The flavor and texture combination is extraordinary — crispy, syrupy, nutty, creamy, with a slight chew that makes it impossible to eat just one bite and stop. Micaela has long been drawn to desserts that blend traditions across cultures, and the Cocoa Pistachio cookie was her attempt to bring that kanafeh magic into a format that anyone could walk in and grab on a Tuesday afternoon.
How We Build It
The base is a soft, fudgy chocolate cookie made with premium cocoa for a deep, dark flavor that’s indulgent without being overwhelming. It’s the kind of chocolate cookie that works perfectly on its own.
But inside there’s a filling that makes it something else entirely: pistachio butter and dried phyllo dough blended together in a way that carries the nuttiness, the slight crunch, and the aromatic sweetness of a traditional kanafeh. When you bite in, you get the chocolate first — then the pistachio filling hits and you’re somewhere you didn’t expect to be. That surprise is intentional.
A Specialty Item for a Reason
The Cocoa Pistachio is part of our Specialty Selection because it takes more time and more precise technique than a standard cookie. The phyllo component has to be prepped, dried, and combined in exactly the right ratio to get the texture right. It’s labor-intensive in the best way. We could simplify it. We’ve chosen not to.
